Established in Copenhagen in 2018, the ISH vision is driven by the desire to pair mindfulness with playfulness. The Château del ISH expressions are award-winning, non-alcoholic wines made from grapes sourced in the Rheingau region of Southern Germany. Grapes are harvested, pressed, and fermented via active yeast cultures in steel vats. The finished wine undergoes dealcoholization at a low temperature, ensuring a finely tuned, wine-like experience despite the lack of alcohol in the final product.
